The powerful Serpico Cabernet Sauvignon from the house of Mitolo glides into the glass with a dense crimson. To the nose this Mitolo red wine reveals all kinds of blackcurrants, blueberries, mulberries and blackberries. As if this wasn't already impressive, the ageing in small wooden barrels is joined by sun-warmed rock, cigar box and oriental spices.
On the palate the texture of this powerful red wine is perfectly balanced. The Serpico Cabernet Sauvignon flatters with its balanced fruit acidity and a soft mouthfeel, without losing any of its freshness. In the finish this red wine from the wine growing region South Australia finally inspires with extraordinary length. Again there are hints of mulberry and black currant. In the aftertaste mineral notes of the soils dominated by limestone and clay are added.
Vinification of the Mitolo Serpico Cabernet Sauvignon
The powerful Serpico from Australia is a pure wine, vinified from the Cabernet Sauvignon grape variety. The grapes grow under optimal conditions in South Australia. Here the vines dig their roots deep into soils of clay and limestone. After the grape harvest, the grapes are immediately transported to the winery. Here they are sorted and carefully broken up. The fermentation follows, after which the Serpico Cabernet Sauvignon is aged for 10 months in French oak barrels.
