Stefan Steinmetz can fall back on first-class vineyards in Brauneberg an der Mosel. At Steinmetz, these include parcels in big names such as the Brauneberger Juffer, but also in old traditional locations such as the Paulinshofberg in Kesten, the Piesporter Goldtröpfchen, the Wintrich Geierslay and Oligsberg or the Mülheim Sonnenlay. As if that were not enough, the Günther Steinmetz winery can also boast vines in the Veldenzer Grafschafter Sonnenberg as well as in the Dhroner Hofberg, from which the ingenious Rieslings and Pinot Noirs are produced.
The secret of the success of the Günther Steinmetz winery is above all rigorous quality fanaticism. Günther Steinmetz's wine-making activities at Günther Steinmetz are characterised by low harvesting volumes, strict selection of the grapes, exclusively manual harvesting and gentle grape processing.
Since 1999, Stefan Steinmetz has been responsible for the development of Günther Steinmetz's wines. However, the generational change has no influence whatsoever on the quality, because when it comes to Steinmetz winery, it is the preservation of tradition. That's why Stefan Steinmetz focuses above all on the independence and strength of character of Rieslings and Pinot Noir. In doing so, he proceeds in a natural manner and tries to use conventional farming methods as seldom as possible.
In the cellar of the Günther Steinmetz winery,"As little as possible, as much as necessary." For this reason, Stefan Steinmetz does not use any yeasts and does not use fining agents, acid additives or deacidification lime. Steinmetz also does not use animal proteins to clarify the musts and only spontaneously vinifies the wines in large wooden barrels.
